Almond Flour Biscotti with Slivered Almonds


Ingredients:


2 cups (240 g) almond flour

1/2 cup (100 g) granulated sugar or sugar substitute

1/2 teaspoon (2.5 ml) baking soda

1/4 teaspoon (1.25 ml) salt

3 large eggs, divided

1 teaspoon (5 ml) pure vanilla extract

1/2 teaspoon (2.5 ml) pure almond extract

3/4 cup (105 g) slivered almonds


Instructions:


Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.


In a large mixing bowl, whisk together the almond flour, granulated sugar or sugar substitute, baking soda, and salt.


In a separate bowl, whisk together two eggs, vanilla extract, and almond extract until well combined.


Pour the wet ingredients into the dry ingredients and mix until a dough forms. Fold in the slivered almonds, ensuring they are evenly distributed throughout the dough.


Transfer the dough to the prepared baking sheet and shape it into a log approximately 12 inches (30 cm) long and 4 inches (10 cm) wide. Use your hands or a spatula to smooth the surface and shape the edges.


In a small bowl, whisk the remaining egg to create an egg wash. Brush the surface of the dough with the egg wash, ensuring an even coating.


Bake the biscotti log in the preheated oven for 25-30 minutes, or until it turns golden brown and feels firm to the touch. Remove the baking sheet from the oven and allow the log to cool on the baking sheet for 15-20 minutes.


Once the log is cool enough to handle, use a serrated knife to carefully slice it into 1/2-inch (1.25 cm) thick biscotti. Lay the slices flat on the baking sheet, with a small gap between each piece.


Lower the oven temperature to 325°F (160°C) and return the baking sheet to the oven. Bake the biscotti for an additional 10-12 minutes on each side, or until they are golden brown and crisp. Keep a close eye on them during the final baking stage to prevent overbrowning.


Remove the biscotti from the oven and allow them to cool completely on a wire rack. Once cooled, store them in an airtight container at room temperature for up to two weeks.
