  • 2 cups almond flour

  • 1/2 cup coconut flour

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 4 large eggs

  • 1/4 cup unsalted butter, melted

  • 1/2 cup unsweetened almond milk

  • 1 teaspoon vanilla extract

For the herb cream cheese:

  • 1 cup cream cheese, softened

  • 2 tablespoons fresh dill, chopped

  • 2 tablespoons fresh chives, chopped

  • 1 tablespoon lemon juice

  • Salt and pepper, to taste

Toppings:

  • 8 oz smoked salmon

  • 1/2 cup capers, drained

  • 1 medium cucumber, thinly sliced

  • Or your favorite toppings

  • Fresh dill or other herbs that you have on hand for garnish

Instructions:

  1. Preheat your waffle iron according to the manufacturer's instructions.

  2. In a large bowl, combine almond flour, coconut flour, baking powder, and salt.

  3. In a separate bowl, whisk together eggs, melted butter, almond milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix well until a smooth batter forms.

  4. Grease your waffle iron with non-stick cooking spray or butter. Pour about 1/4 to 1/2 cup of batter (depending on your waffle iron size) onto the waffle iron and cook until golden brown and crispy. Repeat with the remaining batter. Set cooked waffles aside to cool slightly.
