Ingredients:
2 slices of low-carb bread (such as almond flour or coconut flour bread)
1 ripe avocado
1 cup cherry tomatoes
2 tablespoons olive oil, divided
Salt and black pepper, to taste
1/4 cup pumpkin seeds
Optional: red pepper flakes, lemon juice, and fresh herbs (like basil or parsley)
Instructions:
Roast the Tomatoes:
Preheat your oven to 400°F (200°C).
Toss the cherry tomatoes in 1 tablespoon of olive oil and season with salt and pepper.
Spread them out on a baking sheet and roast in the oven for about 15-20 minutes, or until they are burst and slightly caramelized. Remove from the oven and set aside to cool.
Toast the Bread:
While the tomatoes are roasting, toast your slices of low-carb bread to your preferred level of crispiness.
Roast the Pumpkin Seeds:
In a small skillet, heat the remaining tablespoon of olive oil over medium heat.
Add the pumpkin seeds and a pinch of salt, and toast them, stirring frequently, until they begin to brown and pop, about 3-5 minutes. Remove from heat.
Prepare the Avocado:
In a bowl, mash the avocado with a fork until it reaches your desired consistency. Season with salt, black pepper, and optional lemon juice to taste.
Assemble the Toast:
Spread the mashed avocado evenly on each slice of toasted bread.
Top with roasted tomatoes and sprinkle with roasted pumpkin seeds.
For extra flavor, add red pepper flakes and fresh herbs, if using.
Serve:
Enjoy your healthy, low-carb avocado toast immediately for the best taste and texture.
