Baked Orange Roughy Almondine with Green Beans and Avocado-Pepper Salad


Serves: 4 people


Ingredients:


For the Baked Orange Roughy Almondine:


4 orange roughy fillets (about 1.5 lbs / 680 g)

Salt and black pepper, to taste

1/4 cup almond flour

1/4 cup sliced almonds

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon grated lemon zest

1 tablespoon chopped fresh parsley

1/2 tablespoon dill

For the sides:


1 lb fresh green beans, trimmed

1 tablespoon olive oil

Salt and black pepper, to taste

1 ripe avocado, diced

1 large sweet yellow pepper, diced

1/4 cup (15 g) chopped fresh cilantro

Juice of 1 lime

Salt and black pepper, to taste


Instructions:


Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or aluminum foil.


Prepare the orange roughy fillets: Season both sides of the orange roughy fillets with salt and black pepper. Place the fillets on the prepared baking sheet.


Prepare the almond topping: In a small bowl, mix together the almond flour, sliced almonds, olive oil, melted butter, lemon juice, lemon zest, and chopped parsley and dill. Spread the mixture evenly over the tops of the orange roughy fillets.


Bake the orange roughy: Transfer the baking sheet to the preheated oven and bake for 12-15 minutes, or until the fish flakes easily with a fork and the almond topping is golden brown.


Prepare the green beans: While the fish is baking, toss the green beans with 1 tablespoon (15 ml) of olive oil and season with salt and black pepper. Spread the green beans in a single layer on a separate baking sheet. Add the baking sheet to the oven with the fish, and bake the green beans for 10-12 minutes, until tender and slightly browned.


Prepare the avocado-pepper salad: In a medium bowl, combine the diced avocado, diced yellow pepper, chopped cilantro, and lime juice. Season with salt and black pepper, to taste. Gently toss to combine.


Serve: To serve, divide the Baked Orange Roughy Almondine among four plates. Add a portion of the green beans and a scoop of the avocado-pepper salad to each plate.
