Healthy Chicken Noodle Soup Recipe

Ingredients:


  • 1 rotisserie chicken

  • 2 tablespoons olive oil

  • 1 large onion, chopped

  • 3 carrots, peeled and sliced

  • 3 celery stalks, sliced

  • 3 cloves garlic, minced

  • 8 cups chicken broth

  • 2 cups water

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • Salt and pepper, to taste

  • 1 cups low carb noodles (like zucchini noodles or shirataki noodles)

  • Fresh parsley, chopped (for garnish)


Instructions:


  1. Prepare the Chicken: Remove the meat from the rotisserie chicken and shred it. Set aside.

  2. Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes. Add the minced garlic and cook for another minute.

  3. Add Broth and Seasonings: Pour in the chicken broth and water. Bring the mixture to a boil. Add the thyme, oregano, salt, and pepper. Reduce heat and let simmer for about 20 minutes.

  4. Add Noodles: Add the low carb noodles to the soup and cook according to the package instructions – usually just a few minutes.

  5. Add Chicken: Add the shredded chicken to the pot and heat through.

  6. Serve: Adjust the seasoning if needed. Serve hot, garnished with fresh parsley.

These recipe's look simple, I want to try the chicken soup and the mushroom soup, I only hope my presentation looks as fabulous as these.
