Ingredients:

  • 4 large eggs

  • 1 cup coconut milk

  • 1/2 cup shredded cheese (your choice)

  • 1/2 cup diced vegetables (like spinach, bell peppers, mushrooms)

  • 1/4 cup diced cooked ham or bacon (optional)

  • Salt and pepper to taste

  • A pinch of nutmeg

  • Butter or oil for greasing the pan

Instructions:

  1. Preheat Oven:Ā Preheat your oven to 375Ā°F (190Ā°C). Grease a 9-inch pie dish with butter or oil.

  2. Prepare the Filling:Ā In a skillet, sautĆ© the diced vegetables (and ham/bacon if using) until they are just cooked. Set aside to cool.
