This easy crab salad with pickled red onions is a refreshing and flavorful dish that can be served as an appetizer or light main course. Here's a simple recipe to make it:
Ingredients:
8 oz crab meat, cooked and flaked (imitation crab can be used as an alternative)
1/4 cup mayonnaise
1/4 cup sour cream
1/4 cup chopped celery
2 tbsp fresh lemon juice
2 tbsp fresh chopped parsley
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp Old Bay seasoning (optional)
1 large red onion, thinly sliced
1 cup apple cider vinegar
1/2 cup water
2 tbsp sugar
1 tsp salt
1/2 tsp black peppercorns (optional)
Mixed greens or lettuce for serving (optional)
Instructions:
Pickled Red Onions:
In a small saucepan, combine the apple cider vinegar, water, sugar, salt, and peppercorns (if using). Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar and salt.
Remove the saucepan from heat and let it cool down slightly for about 5 minutes.
Place the thinly sliced red onions in a heat-resistant jar or container. Pour the warm vinegar mixture over the onions, ensuring they are fully submerged. Let the onions sit at room temperature for 30 minutes to an hour to pickle.
Once the onions have reached your desired level of pickling, cover and refrigerate for at least 2 hours. They will become more flavorful the longer they sit.
Crab Salad:
In a large mixing bowl, combine the crab meat, mayonnaise, sour cream, chopped celery, lemon juice, chopped parsley, salt, pepper, and Old Bay seasoning (if using). Gently mix until all ingredients are well incorporated.
Cover and refrigerate the crab salad for at least 30 minutes to allow the flavors to meld.
Assembly:
If using greens or lettuce, arrange them on a serving plate or individual plates.
Place a scoop of crab salad on top of the greens.
Garnish the salad with the pickled red onions.
Serve chilled and enjoy!
This easy crab salad with pickled red onions is sure to be a hit at any gathering, or simply as a delicious and light meal.
