Ingredients:
1 pound large shrimp, peeled and de-veined
Salt and black pepper to taste
2 tablespoons organic extra virgin olive oil
6 cloves garlic, minced
1/2 cup low sodium organic chicken broth or white wine
Zest and Juice of 1 lemon
1/2 teaspoon organic red pepper flakes (optional)
1/4 cup chopped fresh organic parsley
2 tablespoons Mediterranean Extra Virgin olive oil or vegan butter substitute
Grated vegan Parmesan cheese (optional)
Instructions:
Season the shrimp with salt and pepper.
In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and cook until pink, about 2-3 minutes on each side. Remove the shrimp from the skillet and set aside.
In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
Pour in the chicken broth or white wine ,lemon zest and lemon juice, and red pepper flakes if using. Bring to a simmer and let it reduce for about 2 minutes.
Return the shrimp to the skillet and stir in the parsley and olive oil or butter butter. Cook just until the shrimp are heated through and the butter is melted, about 2-3 minutes.
Serve over your favorite pasta or pasta substitute.
