Ingredients:
2 tbsp olive oil
1 medium onion, finely chopped
1 red bell pepper, seeded and diced
2 cloves garlic, minced
1 tsp ground cumin
1 tsp smoked paprika
1/4 tsp cayenne pepper (optional, adjust to taste)
1 can (14 oz) crushed tomatoes
1/2 tsp sugar
Salt and freshly ground black pepper, to taste
4 large eggs
1/4 cup crumbled feta cheese
2 tbsp fresh parsley or cilantro, chopped
Instructions:
Heat olive oil in a large skillet over medium heat. Add the chopped onion and diced bell pepper. Cook for 5-7 minutes, or until the onion is translucent and the bell pepper is softened.
Add the minced garlic, ground cumin, smoked paprika, and cayenne pepper (if using) to the skillet. Cook for 1 minute, stirring constantly, to release the flavors of the spices.
Pour the crushed tomatoes into the skillet. Add the sugar, and season with salt and freshly ground black pepper to taste. Stir well to combine, then let the mixture simmer for 10-15 minutes, or until the sauce has thickened slightly.
Using the back of a spoon, create 4 small wells in the tomato mixture. Carefully crack an egg into each well, ensuring the yolks remain intact.
Cover the skillet with a lid and let the eggs cook for 5-8 minutes, or until the whites are set but the yolks are still runny. You can cook the eggs longer if you prefer them more well-done.
Remove the skillet from the heat, and sprinkle the crumbled feta cheese and chopped parsley or cilantro over the top.
