Ingredients:

  1. 4 flounder fillets (about 6 ounces each)

  2. Salt and pepper to taste

  3. 1/2 cup of all-purpose gluten free flour or organic arrowroot flour, for dusting

  4. 4 tablespoons of unsalted Vegan butter

  5. 1/2 cup of sliced almonds

  6. 2 tablespoons of fresh lemon juice

  7. 2 tablespoons of chopped fresh parsley

  8. Lemon wedges, for serving

Instructions:

  1. Season both sides of the flounder fillets with salt and pepper.

  2. Dredge the fillets in the flour, shaking off any excess.

  3. Melt 2 tablespoons of butter (or butter substitute) in a large skillet over medium heat. Add two of the floured fillets and cook until golden brown and the fish is cooked through, about 2-3 minutes per side. Transfer the cooked fillets to a serving platter and keep warm. Repeat the process with the remaining 2 fillets.

  4. In the same skillet, add the remaining 2 tablespoons of butter. Add the sliced almonds and cook over medium heat, stirring frequently until the almonds are golden brown, about 2 minutes. Be careful not to burn them.

  5. Remove the skillet from the heat and stir in the lemon juice.

  6. Pour the almond mixture over the cooked flounder fillets, sprinkle with fresh parsley, and serve with lemon wedges on the side.
