Ingredients:
4 medium golden beets, peeled and sliced (here's a link to a great slicer I use from Amazon)
1 tablespoon Mediterranean blend extra virgin olive oil
Salt and pepper to taste
4 cups mixed organic salad greens (e.g., arugula, spinach)
1/2 cup goat cheese, crumbled or try Treeline's Vegan cheese
1/4 cup walnuts, toasted
1/4 cup balsamic vinaigrette
Instructions:
Roasting Beets:
Preheat the oven to 400°F (200°C).
Toss the sliced beets in olive oil, salt, and pepper.
Spread the beets on a baking sheet lined with parchment paper.
Roast for 25-30 minutes or until tender. Let cool.
Salad Assembly:
In a large bowl, cut the cooled beets into 1/4' slices and layer on a plate
Add the arugula salad in the center and crumbled goat cheese
Drizzle the balsamic vinaigrette over the salad.
Serving:
Serve immediately as a standalone dish or as a side.
