Ingredients:
1 lb ground chicken
1/2 cup crumbled feta cheese
1/2 cup finely chopped spinach (fresh or thawed and squeezed dry)
1/4 cup pitted Kalamata olives, chopped
1/4 cup finely chopped red onion
2 cloves garlic, minced
1 tbsp chopped fresh oregano (or 1 tsp dried oregano)
1/2 tsp salt
1/4 tsp freshly ground black pepper
1 tbsp olive oil
4 burger buns or lettuce leaves (for a low-carb option)
Optional toppings: sliced tomatoes, cucumber, red onion, tzatziki sauce, lettuce
Instructions:
In a large mixing bowl, combine the ground chicken, crumbled feta cheese, chopped spinach, Kalamata olives, red onion, garlic, oregano, salt, and black pepper. Gently mix until all ingredients are well incorporated, but be careful not to overmix.
Divide the chicken mixture into 4 equal portions and shape each into a burger patty, about 3/4-inch thick.
Heat the olive oil in a large skillet or grill pan over medium heat. Cook the chicken patties for 6-8 minutes per side, or until they reach an internal temperature of 165°F (74°C) and are cooked through.
While the chicken patties are cooking, prepare your desired toppings and toast the burger buns, if using.
Assemble the Greek chicken burgers by placing each cooked patty on the bottom half of a burger bun or a lettuce leaf (for a low-carb option). Top with sliced tomatoes, cucumber, red onion, a dollop of tzatziki sauce, and lettuce, if desired. Finish by placing the top half of the burger bun or another lettuce leaf on top.
