Ingredients:
For the Meatballs:
1 lb (450g) ground chicken
1/4 cup breadcrumbs
1 large egg
1/4 cup finely chopped red onion
2 cloves garlic, minced
1/4 cup fresh parsley, finely chopped
2 tablespoons fresh dill, finely chopped (or 1 tablespoon dried dill)
1 teaspoon dried oregano
Zest of 1 lemon
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup feta cheese, crumbled (optional)
Olive oil, for cooking
For the Tzatziki Sauce (optional but recommended):
1 cup Greek yogurt
1 cucumber, grated and squeezed to remove moisture
2 cloves garlic, minced
1 tablespoon olive oil
2 tablespoons fresh dill, chopped
Juice of 1/2 lemon
Salt and pepper to taste
Instructions:
Preheat Oven and Prepare Baking Sheet:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
Mix Meatball Ingredients:
In a large bowl, combine the ground chicken, breadcrumbs, egg, red onion, garlic, parsley, dill, oregano, lemon zest, salt, pepper, and feta cheese (if using). Mix until just combined, being careful not to overmix.
Form Meatballs:
Using your hands, form the mixture into small balls, about 1 inch in diameter. Place the meatballs on the prepared baking sheet.
Bake:
