Greek Lemon Chicken Salad

Ingredients:

  1. 2 boneless, skinless chicken breasts

  2. 1 large organic lemon, juiced and zested (Best selling zesting tool on Amazon)

  3. 2 tablespoons extra virgin olive oil

  4. Salt and pepper to taste

  5. 6 cups organic mixed salad greens

  6. 1/2 red onion, thinly sliced

  7. 1 cup cherry tomatoes, halved

  8. 1/4 cup feta cheese or feta cheese substitute

  9. 1/4 cup chopped fresh parsley

For the dressing:

  1. 1/4 cup extra-virgin olive oil

  2. 2 tablespoons lemon juice

  3. 1 teaspoon organic honey

  4. Salt and pepper to taste

Instructions:

  1. Marinate the chicken breasts in the lemon juice, olive oil, lemon zest, salt, and pepper for at least 30 minutes, or up to overnight in the refrigerator.

  2. Preheat a grill or skillet over medium-high heat. Cook the chicken until it's no longer pink in the middle, about 7-8 minutes per side. Once cooked, let it rest for a few minutes then slice into thin strips.

  3. While the chicken is cooking, prepare the dressing. Whisk together the olive oil, lemon juice, honey, salt, and pepper in a small bowl.

  4. In a large bowl, combine the salad greens, red onion, cherry tomatoes, feta cheese, and chopped parsley. Toss with the dressing until everything is well coated.

  5. Add the sliced chicken to the salad and toss again gently to combine.

  6. Serve the salad immediately, with extra lemon wedges on the side if desired.
