Ingredients:


  • 4 boneless, skinless chicken breasts (about 4-6 oz each)

  • 1/4 cup grated Parmesan cheese

  • Salt and pepper to taste

  • 2 tablespoons olive oil or avocado oil

  • 2 tablespoons unsalted butter

  • 2 cloves garlic, minced

  • 1 cup chicken broth

  • 1/4 cup fresh lemon juice (about 1-2 lemons)

  • 2 tablespoons capers, rinsed and drained

  • 1/4 cup fresh parsley, chopped


Instructions:


Prep the Chicken:

  • Slice chicken breasts in half horizontally to create thinner cutlets.

  • Season both sides with salt and pepper.

  • Mix almond flour and Parmesan cheese in a shallow dish. Dredge each chicken cutlet in the mixture, shaking off excess.

  • Cook the Chicken:


  • Heat olive oil in a large skillet over medium-high heat.

  • Add chicken cutlets to the skillet and cook for 3-4 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F). Remove chicken and set aside.


Make the Sauce:


  • Reduce the heat to medium and add butter to the same skillet. Stir in minced garlic and cook for 1 minute, until fragrant.

  • Add chicken broth, lemon juice, and capers. Scrape the bottom of the pan to release any browned bits (this adds flavor). Let the sauce simmer for 5-7 minutes, until slightly reduced.


Combine:


  • Return the chicken to the skillet and spoon the sauce over the top. Cook for another 2-3 minutes to reheat and coat the chicken.


Garnish and Serve:


  • Sprinkle with fresh parsley and serve immediately.
