Ingredients:
12 fresh oysters, shucked and left on the half shell
1 tablespoon (15 ml) olive oil
2 cloves garlic, minced
2 cups (120 g) fresh baby spinach
1/4 cup (60 ml) white wine (optional)
1/4 cup (15 g) fresh parsley, chopped
1/4 cup of (60 ml) of whipped cream cheese
1/4 cup (60 ml) non-fat Greek yogurt
1/4 cup (25 g) breadcrumbs
1/4 cup (20 g) grated Parmesan cheese
Salt and black pepper, to taste
Fresh lemon wedges, for serving
Instructions:
Preheat your oven to 450°F (232°C). Line a baking sheet with aluminum foil or parchment paper.
Prepare the oysters: Scrub the oyster shells clean under running water. Shuck the oysters, ensuring that you retain the oyster and its liquid in the bottom half of the shell. Arrange the oysters on the prepared baking sheet.
Cook the spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute, until fragrant. Add the baby spinach and cook, stirring frequently, until the spinach has wilted, about 3-4 minutes. If using, pour in the white wine and continue to cook until the liquid has mostly evaporated.
Combine the spinach mixture with other ingredients: Transfer the cooked spinach to a cutting board and roughly chop it. In a medium bowl, combine the chopped spinach, parsley, non-fat Greek yogurt, cream cheese and breadcrumbs, and grated Parmesan cheese. Season with salt and black pepper, to taste.
Assemble the oysters: Top each oyster on the half shell with a heaping spoonful of the spinach mixture, ensuring that the oyster is fully covered.
Bake the oysters: Transfer the baking sheet with the prepared oysters to the preheated oven. Bake for 10-12 minutes, or until the topping is golden brown and bubbling.
Serve: Remove the oysters from the oven and allow them to cool slightly. Serve the Healthy Oysters Rockefeller warm, with fresh lemon wedges for squeezing over the top.
