Hearty Lentil Soup with Fresh Fennel, Carrots, Celery, and Onions

This flavorful and nutritious lentil soup is packed with fresh vegetables, aromatic herbs, and hearty lentils, making it perfect for a comforting meal.
Ingredients:
• 2 tablespoons olive oil
• 1 medium fennel bulb, diced (reserve fronds for garnish)
• 2 carrots, diced
• 2 celery stalks, diced
• 1 large onion, diced
• 4 cloves garlic, minced
• 1 teaspoon salt (or to taste)
• ½ teaspoon black pepper
• 1 teaspoon ground cumin
• 1 teaspoon dried thyme (or 2 teaspoons fresh)
• 1 teaspoon dried oregano
• ½ teaspoon smoked paprika (optional)
• 1 ½ cups green or brown lentils, rinsed
• 6 cups vegetable broth (or water)
• 1 (14.5 oz) can diced tomatoes (optional, for a richer broth)
• 1 bay leaf
• 1 tablespoon lemon juice (or red wine vinegar)
• Fresh parsley or fennel fronds for garnish
Instructions:
1. Sauté the Aromatics:
Heat the olive oil in a large pot over medium heat. Add the diced fennel, carrots, celery, and onion. Sauté for about 5–7 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.
2. Add the Spices:
Stir in the salt, black pepper, cumin, thyme, oregano, and smoked paprika. Let the spices toast for about 30 seconds to enhance their flavors.
3. Cook the Lentils:
Add the lentils, vegetable broth, diced tomatoes (if using), and bay leaf. Bring to a boil, then reduce the heat to a gentle simmer. Cover and cook for about 25–30 minutes, or until the lentils are tender.
4. Finish the Soup:
Remove the bay leaf. Stir in the lemon juice or vinegar to brighten the flavors. Taste and adjust seasoning if needed.
5. Serve & Garnish:
Ladle the soup into bowls and top with fresh parsley or reserved fennel fronds. Drizzle with a bit of extra olive oil if desired.
