Lemon Zest and Fig Pancakes

Ingredients:


2 cups pancake mix

1 1/4 cups water (or as directed on the pancake mix package)

1 lemon (zested)

1/2 cup fresh figs, chopped

1 tablespoon sugar (optional)

Butter or oil for cooking

Maple syrup or honey for serving


Instructions:


Prepare the Batter:

In a large mixing bowl, combine the pancake mix and water. Mix until just combined; there may still be some lumps.

Add the lemon zest and chopped figs to the batter. If you like sweeter pancakes, you can also add the tablespoon of sugar. Gently fold the zest and figs into the batter.


Heat the Griddle:

Preheat a griddle or non-stick frying pan over medium heat. Add a small amount of butter or oil to coat the surface.


Cook the Pancakes:

Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

Flip the pancakes and cook for another 1-2 minutes on the other side, until golden brown.


Serve:

Transfer the cooked pancakes to a plate and keep warm while you cook the remaining batter.

Serve the pancakes warm, topped with a drizzle of maple syrup or honey.
