Mediterranean Chicken Meatballs with Tzatziki Sauce

Ingredients:

  1. 1 lb ground chicken

  2. 1/4 cup breadcrumbs

  3. 1/4 cup feta cheese, crumbled

  4. 2 cloves garlic, minced

  5. 1 small onion, finely chopped

  6. 1/4 cup fresh parsley, chopped

  7. 1 cup fresh spinach

  8. 2 tbsp Greek Seasoning

  9. 1 tbsp fresh Mint

  10. 1/2 tsp dried thyme

  11. tbsp Kalamata olives

  12. Zest of 1 lemon

  13. 1 tbsp lemon juice

  14. 1 egg, lightly beaten

  15. Salt and pepper, to taste

  16. 2 tbsp olive oil, for cooking


Instructions:

  1. In a large mixing bowl, combine ground chicken, breadcrumbs, feta cheese, garlic, onion, parsley, Spinach ,Kalamata olives, oregano, thyme, lemon zest, lemon juice, and egg. Season with salt and pepper.

  2. Mix the ingredients until just combine Do not over-mix to ensure tender meatballs.

  3. Form the mixture into approximately 1-inch diameter meatballs. Let sit in the Fridge for 1 hour

  4. Heat olive oil in a large skillet over medium heat.

  5. Once the oil is hot, add the meatballs in batches, ensuring not to overcrowd the pan. Cook for about 4-5 minutes on each side or until they are golden brown and cooked through.

  6. Transfer the cooked meatballs to a plate lined with paper towels to drain any excess oil.

  7. Serve immediately with tzatziki sauce and a salad ( You also can buy store made Tzatziki Sauce but recipe follows )


Tzatziki Sauce Recipe


  • 2 cups plain Greek yogurt

  • 1 cucumber, finely grated and drained

  • 2 cloves garlic, finely minced

  • 2 tablespoons fresh dill, chopped

  • 1-2 tablespoons lemon juice (to taste)

  • 2 tablespoons olive oil

  • Salt and pepper, to taste


  1. Peel the cucumber and grate it using a fine grater. Squeeze out as much liquid as possible using a cheesecloth or clean kitchen towel.

  2. In a mixing bowl, combine the Greek yogurt, drained cucumber, minced garlic, chopped dill, lemon juice, and olive oil.

  3. Mix well until all ingredients are well combined.

  4. Season with salt and pepper to taste.

  5. Refrigerate for at least 1 hour before serving to for flavors to meld

Serve with pita bread, fresh vegetables, or as a condiment with grilled meats. Enjoy!
