Mediterranean Magic Meets Tex-Mex: A Fusion Fajita Feast



Mediterranean Fajitas blend the vibrant flavors of Mediterranean cuisine with the beloved Tex-Mex fajita concept. Here's a unique recipe that brings together the best of both worlds:


For the Fajitas:


  • 1 lb (450g) chicken breast, thinly sliced

  • 2 tablespoons olive oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 medium red onion, sliced

  • 2 cloves garlic, minced

  • 1 teaspoon smoked paprika

  • 1 teaspoon ground cumin

  • 1/2 teaspoon dried oregano

  • Salt and pepper to taste

  • 4-6 medium whole wheat or flour tortillas

For the Mediterranean Salsa:


  • 1 cup cherry tomatoes, quartered

  • 1/2 cucumber, diced

  • 1/4 cup kalamata olives, chopped

  • 1/4 cup feta cheese, crumbled

  • 2 tablespoons fresh parsley, chopped

  • 1 tablespoon olive oil

  • Juice of 1 lemon

  • Salt and pepper to taste

Additional Toppings (Optional):


  • Hummus

  • Greek yogurt or tzatziki sauce

  • Sliced avocado or guacamole

Instructions:


  1. Marinate the Chicken: In a large bowl, combine the chicken slices with 1 tablespoon olive oil, smoked paprika, ground cumin, dried oregano, salt, and pepper. Mix well to ensure the chicken is evenly coated with the spices. Let it marinate for at least 30 minutes, or up to a few hours in the refrigerator.

  2. Prepare the Mediterranean Salsa: In a medium bowl, combine cherry tomatoes, cucumber, kalamata olives, feta cheese, and parsley. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss to combine and set aside to let the flavors meld.

  3. Cook the Chicken and Vegetables: Heat a large skillet or grill pan over medium-high heat. Add the remaining tablespoon of olive oil. Add the marinated chicken and cook for 5-6 minutes, or until it's fully cooked and slightly charred. Remove the chicken from the skillet and set aside.

  4. In the same skillet, add the sliced bell peppers, red onion, and minced garlic. Sauté for about 5 minutes, or until the vegetables are tender and slightly caramelized. Return the chicken to the skillet and toss everything together. Adjust seasoning with salt and pepper as needed.

  5. Warm the Tortillas: Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they are soft and pliable.

  6. Assemble the Fajitas: On each tortilla, spread a thin layer of hummus (if using), then top with a generous serving of the chicken and vegetable mixture. Add a spoonful of the Mediterranean salsa, and if desired, a dollop of Greek yogurt or tzatziki, and sliced avocado.

  7. Serve: Fold the tortillas around the filling and serve immediately. Enjoy your Mediterranean fajitas with additional salsa, yogurt, or guacamole on the side.
