Ingredients:
4 salmon fillets, about 6 oz each, skin-on
1 medium eggplant, diced into 1/2-inch cubes
1 medium zucchini, diced into 1/2-inch cubes
1 medium yellow squash, diced into 1/2-inch cubes
1 red bell pepper, seeded and diced into 1/2-inch cubes
1 yellow bell pepper, seeded and diced into 1/2-inch cubes
1 large onion, chopped
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, with juices
1/4 cup extra virgin olive oil, divided
1/2 tsp dried thyme
1/2 tsp dried oregano
Salt and ground black pepper, to taste
Fresh basil, chopped, for garnish (optional)
Fresh parsley, chopped, for garnish (optional)
Instructions:
Preheat the oven to 400°F (200°C).
In a large ovenproof skillet or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the onion and cook for 3-4 minutes until softened. Add the garlic and cook for an additional 1 minute.
Stir in the eggplant, zucchini, yellow squash, and bell peppers. Season with thyme, oregano, salt, and black pepper. Cook, stirring occasionally, for about 10-12 minutes, until the vegetables are slightly softened.
Add the diced tomatoes with their juices to the skillet, stirring to combine. Allow the mixture to simmer for 5-7 minutes, until the liquid has slightly reduced.
In the meantime, pat the salmon fillets dry with a paper towel and season with salt and black pepper on both sides.
Nestle the salmon fillets, skin-side down, into the vegetable mixture. Drizzle the salmon with the remaining 2 tablespoons of olive oil.
Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
Remove the skillet from the oven, and let it rest for a few minutes. Garnish with chopped fresh basil and parsley, if desired.
To serve, use a spatula to lift the salmon fillets onto individual plates. Spoon the ratatouille mixture alongside the salmon, ensuring each portion has an assortment of vegetables.
