Salmon & Sweet Potato Cakes

Ingredients:

  • 2 medium sweet potatoes

  • 2 fillets of fresh salmon (around 500g total)

  • 2 green onions, finely sliced

  • 1 tablespoon fresh dill, chopped

  • 2 tablespoons mayonnaise

  • 1 teaspoon Dijon mustard

  • Salt and pepper to taste

  • 1 cup breadcrumbs

  • 2 tablespoons olive oil

Instructions:

  1. Preheat your oven to 200C/400F. Prick the sweet potatoes with a fork and place them in the oven for about 45 minutes, or until soft.

  2. While the sweet potatoes are cooking, place the salmon on a baking sheet lined with parchment paper. Season with salt and pepper, and bake in the oven for about 15 minutes, or until fully cooked.

  3. Once the sweet potatoes and salmon are cooked, let them cool. Then peel and mash the sweet potatoes and flake the salmon into small pieces.

  4. In a large bowl, combine the mashed sweet potatoes, flaked salmon, green onions, dill, mayonnaise, Dijon mustard, salt, and pepper. Mix well until all ingredients are evenly distributed.

  5. Form the mixture into small patties and coat them in the breadcrumbs.

  6. Heat the olive oil in a large skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.

  7. Serve your Salmon and Sweet Potato Cakes warm with a side of salad or your favorite dipping sauce.
