Ingredients

2 large fennel bulbs

3 tablespoons of olive oil

Salt to taste

Freshly ground black pepper to taste

Lemon zest from one lemon

Freshly squeezed juice from half a lemon

A small handful of fresh chopped parsley for garnish


Instructions


Preheat your oven and prepare the fennel: Start by preheating your oven to 400°F (200°C). While your oven is heating up, prepare your fennel bulbs. Cut off the tops (save some fronds for garnishing if you wish), and then slice the bulb in half lengthways. With the flat side down, cut each half into 1-inch-thick slices.


Season the fennel: Place the fennel slices in a large mixing bowl. Drizzle them with the olive oil, then season with salt and pepper. Toss everything together until the fennel slices are well coated with oil and seasoning.


Arrange the fennel on the baking sheet: Line a baking sheet with parchment paper for easy cleanup, then arrange the fennel slices on the sheet in a single layer.


Roast the fennel: Put the baking sheet in your preheated oven. Roast the fennel for about 30-35 minutes, turning the slices over halfway through. The fennel should become tender and slightly caramelized around the edges when it's ready.


Add the finishing touches: Once your fennel is beautifully roasted, remove it from the oven. While it's still hot, sprinkle it with lemon zest and freshly squeezed lemon juice. This will give it a delightful freshness that complements the rich, caramelized flavor of the roasted fennel.


Serve and enjoy: Transfer the roasted fennel to a serving platter. Garnish with a sprinkle of fresh chopped parsley and some reserved fennel fronds if you have them. Your delicious and simple roasted fennel is ready to enjoy!
