Ingredients:
4 soft shell crabs, cleaned
2 eggs
1 cup arrowroot flour
2 tablespoons Old Bay seasoning
1 teaspoon salt
1 teaspoon black pepper
Cooking oil spray (for air fryer) or 4 tablespoons of cooking oil (for cast iron pan)
Lemon wedges, for serving
Fresh parsley, chopped (optional)
Instructions:
Prepare the Egg Wash and Coating:
In a bowl, whisk the eggs until well combined.
In a separate shallow dish, combine the arrowroot flour, Old Bay seasoning, salt, and black pepper.
Coat the Crabs:
Dip each soft shell crab into the egg wash, making sure it's fully coated.
Dredge the crab in the arrowroot flour mixture, ensuring an even coating. Shake off any excess flour.
Cooking Method 1: Air Fryer
Preheat the air fryer to 375°F (190°C).
Spray the air fryer basket with cooking oil spray.
Place the coated crabs in a single layer in the air fryer basket.
Lightly spray the top of the crabs with cooking oil.
Air fry for 10-12 minutes, flipping halfway through, until the crabs are golden brown and crispy.
Cooking Method 2: Cast Iron Pan
Heat the cooking oil in a cast iron pan over medium-high heat.
Once the oil is hot, carefully place the crabs in the pan.
Cook for 3-4 minutes on each side, or until golden brown and crispy.
Transfer the cooked crabs to a paper towel-lined plate to drain any excess oil.
