Steak and Shrimp Taco Bowls with Pickled Red Onion and Fresh Guacamole

Ingredients:
1 lb flank steak, thinly sliced
1 lb shrimp, peeled and deveined
1 large red onion, thinly sliced
1 cup apple cider vinegar
1/2 cup water
2 tablespoons sugar
1 teaspoon salt
2 avocados, peeled and pitted
1/2 small red onion, finely chopped
1 jalapeƱo, seeded and minced
1/4 cup cilantro, chopped
2 tablespoons lime juice
Salt and pepper, to taste
1 tablespoon olive oil
2 teaspoons chili powder
2 teaspoons paprika
2 teaspoons cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cayenne pepper (optional)
1/4 cup chopped fresh cilantro, for garnish
1 lime, cut into wedges, for garnish
lettuce of your choice
Instructions:
Prepare the pickled red onions: In a small saucepan, combine apple cider vinegar, water, sugar, and salt. Heat over medium heat until sugar and salt dissolve. Remove from heat and let cool for 5 minutes. Place thinly sliced red onion in a jar or container, and pour the vinegar mixture over the onions. Let sit for at least 30 minutes, preferably 1 hour or more for better flavor.
Prepare the guacamole: In a medium bowl, mash the avocados with a fork until creamy but still slightly chunky. Add in the chopped red onion, jalapeƱo, cilantro, and lime juice. Stir to combine. Season with salt and pepper to taste. Set aside.
Prepare the steak and shrimp: In a small bowl, mix chili powder, paprika, cumin, garlic powder, onion powder, and cayenne pepper (if using) to create a spice blend. Coat the sliced steak and shrimp with the spice blend.
Heat a large skillet over medium-high heat and add olive oil. Cook the steak for 2-3 minutes per side or until desired doneness. Transfer to a plate and cover with foil to keep warm.
In the same skillet, cook the shrimp for 2 minutes per side or until pink and cooked through. Remove from heat.
