Turkish Style Eggplant

Ingredients

  • 2 medium-sized eggplants, peeled and cubed

  • 2 tablespoons olive oil

  • 1 onion, finely chopped

  • 1 bell pepper, diced

  • 3 cloves garlic, minced

  • 1 can (14 oz.) diced tomatoes, drained

  • 1 teaspoon ground cumin

  • 1 teaspoon ground cinnamon

  • Salt and pepper to taste

  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions:

  1. Preparation: Peel and cube the eggplants, placing them in a bowl of salted water for 20 minutes. Drain and pat dry.

  2. Cook Eggplant: In a large skillet, heat olive oil over medium heat. Add the eggplant cubes and sauté until they are lightly browned and softened. Remove the eggplant from the skillet and set aside.

  3. Prepare Vegetables: In the same skillet, add more oil if needed. Add onions, bell pepper, and garlic, sautéing until the onions are translucent.

  4. Combine Ingredients: Add the drained diced tomatoes, cumin, and cinnamon to the skillet. Stir to combine.

  5. Reintroduce Eggplant: Add the sautéed eggplant back into the skillet. Stir to mix all the ingredients.

  6. Season: Add salt and pepper to taste. Let the mixture simmer for 10-15 minutes or until all the flavors are well combined and the eggplant is tender.

  7. Garnish and Serve: Sprinkle fresh parsley over the dish just before serving.

  8. Optional: This dish can be served hot with a side of rice or bread.
