  1. Preparation: Preheat your oven to 375°F (190°C).

  2. Egg Mixture: In a medium-sized bowl, whisk together the eggs, milk, salt, and pepper. Set aside.

  3. Vegetable Sauté: In an oven-safe skillet over medium heat, add the olive oil or butter. Once hot, add the red onion, garlic, bell pepper, and zucchini. Sauté until the vegetables are slightly softened, about 4-5 minutes.

  4. Tomatoes & Basil: Add the heirloom tomatoes to the skillet and stir gently. Continue cooking for another 2 minutes. Sprinkle the fresh basil over the vegetables.

  5. Adding Eggs: Pour the egg mixture over the vegetables, ensuring even distribution. Let it cook undisturbed for about 2-3 minutes, just until the edges begin to set.

  6. Oven Baking: Transfer the skillet to the preheated oven. Bake for 10-12 minutes, or until the frittata is fully set in the center.

  7. Cheese Topping (Optional): If using, sprinkle the Parmesan and feta or goat cheese over the top during the last 3 minutes of baking.

  8. Serving: Once baked, remove the skillet from the oven and let it cool for a couple of minutes. Slice the frittata into wedges and serve warm.
